CHAMPION CHICKEN PARMESAN
SAUCE (My moms special Italian Recipe)
1. 1 Onion
2. 1 Red pepper
3. 3 Small pieces of garlic (cut very tiny) or a bit of garlic seasoning will do too
4. A little of parsley (cut very tiny)
5. 1 Can of diced tomatoes
6. 1 Cup of Hot water
7. Little salt & black pepper
8. 1 Big spoon of Balsamic pepper
9. Let cook for 15-20 minutes
1. Place 2 Eggs in bowl & batter
2. Put 4 Pieces of chicken in egg bowl
3. Place chicken in bowl of flour with parmesan cheese
4. Place flat pan with vegetable oil on stove
5. Fry chicken until yellow
6. Place chicken in flat dish (oven use)
7. Put all tomato sauce on top of chicken
8. Top with mozzarella cheese
9. Leave in oven for 15 minutes
Last week was my boyfriends 30th birthday & he really wanted a cake from All American Cookie Company but somehow all the ones we had here disappeared, so I decided to look online for some recipes on how to make my own. I found one that was pretty simple & decided to try it. I then gave it to my boyfriend & told him that if he LOVED it, Id keep it for the future. Indeed it was a success :0) My only disappointment was the icing. I made a booboo. Used some black writing icing & realized I didnt have enough so I had to improvize with what I had & try to make the best of it. I bought icing but you can very well use your own homemade recipe. I do have to say one thing...ok so I thought this was going to be a small cake but it kept growing and growing and I had to transfer it to a bigger pan. Lets just say, I ended up using a 16inch pizza pan so thats about how big it got! My boyfriend still has some in the fridge :0) so its a nice cake to do for a lot of people.
CHOCOLATE CHIP COOKIE CAKE RECIPE:
• 1 cup butter, softened (not melted)
• 1 cup packed brown sugar
• 1 cup white sugar
• 2 eggs
• 2 teaspoons vanilla extract
• 3 cups all-purpose flour
• 1 teaspoon baking soda
• 2 teaspoons hot water
• 1/2 teaspoon salt
• 2 cups semi sweet chocolate chips
• 1 cup chopped walnuts (optional)
DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C).
2. Cream together butter, white sugar, and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Dissolve baking soda in hot water. Add to the batter along with the salt. Stir in flour, chocolate chips, and nuts (optional). Drop by large spoonfuls onto ungreased cookie sheet.
3. Bake for about 10 minutes in the preheated oven, or until the edges are slightly browned. ( I had to bake mine for about 30minutes)
For the Frosting I used Blue Wilton Ready to Decorate Icing & Betty Crocker Decorating Cupcake Icing in Cloud White that I bought in walmart, but you can also find it in your supermarket. Whats cool about them is that they come with four types of decorating tips that you can use on the cakes and keep them for the future.
*The secret to making a good cookie cake is using parchment paper (in the same aisle as the cling wrap and aluminum foil). Parchment paper keeps the dough from spreading and doesn't allow the dough to stick to the pan. Cut the parchment paper to fit the cookie sheet or baking stone. After you've put the parchment paper on the stone or pan, use a spatula to evenly spread the cookie dough into whatever shape you desire (circle, heart, square, etc.).
*Place the cookie sheet or baking stone into the preheated oven, and follow the directions for cooking time. Cookie cakes can take a little longer to bake, so make sure to check the cookie frequently. Once the edges are slightly browned, remove the cookie from the oven. Slide the cookie and parchment paper from the cookie sheet, and let it cool completely before frosting it.
